How to use your Sample Packs

"THE ONE" - Sweet & Savory

 🍠🔥 Sweet & Smoky Roasted Sweet Potatoes

Serves: 4


Ingredients

  • 2 large sweet potatoes or yams, peeled (optional) + cut into 1-inch cubes
  • 1 Sample Pack of THE ONE seasoning
  • ½–1 tsp Let’s Smoke seasoning
  • 2–3 Tbsp olive oil
  • 1 tsp lemon juice or apple cider vinegar
  • 1 Tbsp maple syrup or honey (optional for extra caramelization)
  • Fresh parsley or thyme (optional)

Instructions

     1. Prepare the Sweet Potatoes

  • Preheat oven to 425°F.
  • Peel if desired and cut into 1-inch cubes.
  • Pat dry 

     2. Season

     In a large bowl combine:

  • Sweet potatoes
  • Olive oil
  • 1 Tbsp THE ONE seasoning
  • ½–1 tsp Let’s Smoke seasoning
  • Lemon juice or ACV
  • Maple syrup or honey (optional)
  • Toss until everything is evenly coated.

     3. Roast

  • Spread potatoes in a single layer on a baking sheet lined with parchment.
  • Roast 25–35 minutes, flipping halfway through.
  • Cook until edges are caramelized, browned, and tender.

     4. Finish & Serve

  • Toss lightly on the tray.
  • Optional: sprinkle fresh parsley or thyme.

     Serve hot and enjoy that sweet + smoky + garlicky goodness!

"Savor the Flavor" - Peppery Bite

⭐ Super Simple Short Ribs


Ingredients

  • 6–8 oz beef short ribs
  • 1 sample pack of Savor the Flavor
  • ½–1 tsp salt (adjust to taste)
  • 1 Tbsp oil
  • ½ cup beef broth (or water)

  

Instructions

     1. Season

  • Pat ribs dry.
  • Rub the entire sample pack of Savor the Flavor all over the ribs.

     2. Sear

  • Heat oil in a small pan over medium-high heat.
  • Sear ribs on all sides until browned (about 2–3 minutes per side).

     3. Braise

  • Add ½ cup beef broth (or water) to the pan.
  • Cover with a lid and reduce heat to low.
  • Let cook 1.5–2 hours, turning halfway through, until fork-tender.

     4. Finish

  • Uncover and simmer for a few minutes to thicken the juices.
  • Add a pinch more of the blend at the end if you want extra pepper kick, if the pack contained a little extra.

"Bayou Blaze" - Cajun

🍊🔥 Cajun Cranberry Sauce

Makes: ~2 cups

Ingredients

  • 12 oz Whole cranberries
  • 1 1/2 cups firmly packed brown sugar (1 cup for less sweet)
  • 1/2 cup orange juice
  • 1/2 cup water
  • 1/3 cup Brandy (or not)
  • 1 Sample pack Bayou Blaze Cajun seasoning
  • 1 tsp orange zest (optional but recommended)
  • 3/4 tsp Cinnamon
  • 1/2 tsp Nutmeg
  • 1/3 cup Rasins (Optional)

Instructions

     1. Combine the base

  • In a medium saucepan, add:
  • Cranberries
  • Rasins (optional)
  • Brown sugar
  • Orange juice
  • Brandy
  • Water

     Stir and bring to a simmer over medium heat.

     2. Add Spices

        Once it starts to bubble, stir in:

  •  1 Tbsp Bayou Blaze
  • 3/4 tsp Cinnamon
  • 1/2 tsp Nutmeg

         This blooms the Cajun spices and infuses heat + depth.

     3. Simmer

        Cook for 10–15 minutes, stirring occasionally, until:

  • Most cranberries burst
  • Sauce thickens and becomes glossy

     (If it gets too thick, stir in a splash of water.)

     4. Finish

  • Remove from heat. Stir in:
  • Orange zest

     Let cool. It will thicken more as it chills.

"Southern Sizzle" - Creole

🥘 Creole Stuffing

Makes: 6 servings

Ingredients

  •   4–5 cups of plain dried stuffing cubes
  • 1 Sample pack Southern Sizzle
  • 4 Tbsp butter
  • 1 cup onion, diced
  • 1 cup celery, diced
  • ½ cup bell pepper, diced 
  • 2–3 cloves garlic, minced
  • 1 ½–2 cups chicken broth 
  • 1 egg, beaten
  • ¼ tsp black pepper
  • 1 tsp dried thyme (optional)
  • 1 tsp parsley (optional)

 Instructions

         1. Cook the veggies

     In a large skillet:

  • Melt 4 Tbsp butter over medium heat.
  • Add onion, celery, and bell pepper.
  • Sauté 6–8 minutes until soft.
  • Add garlic and cook 1 minute more.
  • Stir in 1 Tbsp Southern Sizzle so the spices bloom in the butter.
  • Add optional thyme or parsley if using.

     2. Combine the stuffing

     In a large bowl:

  • Add dried bread cubes.
  • Pour the seasoned veggie mixture over the bread.
  • Add 1 cup broth and the beaten egg.
  • Mix gently, adding more broth as needed until the bread is moist but not soggy.

     4. Bake

  • Transfer stuffing to a greased baking dish.
  • Cover with foil and bake 25 minutes at 350°F.
  • Remove foil and bake an additional 10–15 minutes until the top is golden and lightly crisp.

"The Spice is Right" - Robust & Rich

🍗 Roasted Cornish Hen

Serves: 1–2


Ingredients

  • 1 Cornish hen (1 ¼–1 ½ lb)
  • 1 Sample Pack The Spice Is Right seasoning
  • 2 Tbsp butter, softened
  • 1 Tbsp olive oil
  • 2 cloves garlic, minced
  • ½ lemon (cut into wedges)
  • 1 small onion, quartered
  • Optional fresh herbs: rosemary, thyme, sage

Instructions

     1. Prep the hen

  • Pat the Cornish hen dry with paper towels.
  • Tuck wing tips behind the bird to prevent burning.
  • Sprinkle a small pinch of The Spice Is Right inside the cavity

     2. Make the seasoning butter

  • Mix together:
  • 2 Tbsp softened butter
  • 1 Tbsp The Spice Is Right
  • Minced garlic

     This becomes your flavor paste.

     3. Season

  • Rub the hen lightly with olive oil.
  • Lift the breast skin and rub some seasoning butter underneath.
  • Spread the remaining butter over the outside of the hen.
  • Add lemon wedges and a piece of onion into the cavity.

     4. Roast

  • Preheat oven to 400°F.
  • Place hen in a small roasting pan or cast-iron skillet.
  • Roast 45–55 minutes, until internal temp reaches 165°Fat the thigh.
  • Tent with foil if browning too quickly.

     5. Rest & Serve

  • Let rest for 10 minutes before cutting.
  • Squeeze the roasted lemon over the top to brighten the flavors.

"Let's Smoke" - Just a kiss of Smoke

  

🥬🔥 Smoky Roasted Brussels Sprouts

Serves: 4

Ingredients

  • 1 lb Brussels sprouts, trimmed + halved
  • 1 Sample pack of Let’s Smoke seasoning
  • 2–3 Tbsp olive oil
  • 1–2 tsp maple syrup (optional for balance)
  • 1 clove garlic, minced (optional)
  • Black pepper to taste
  • 1–2 Tbsp chopped bacon or pancetta (optional but amazing)

Instructions

     1. Prepare the Brussels

  • Preheat oven to 425°F.
  • Trim ends and slice Brussels sprouts in half.
  • Pat dry (this helps them crisp).

     2. Season

     In a large bowl combine:

  • Brussels sprouts
  • Olive oil
  • 1 Tbsp Let’s Smoke
  • Maple syrup (optional)
  • Garlic (optional)

     Toss until evenly coated.

     3. Roast

  • Spread Brussels sprouts cut-side down on a baking sheet.
  • Roast 18–22 minutes, until edges are crispy and browned.
  • If adding bacon or pancetta, sprinkle it on the pan before roasting.

     4. Finish & Serve

  • Toss lightly on the tray.
  • Add black pepper to taste.
  • Optional: squeeze a little lemon juice for brightness.
